Whew, sorry to get this out so late! I had technical difficulties with uploading pictures to flickr this weekend, but worked them out in the nick of time...
The Daring Bakers challenges so far have been exactly what I've been looking for - a reason to bake things I haven't tried in the past! January's challenge was no different. A few months ago, we went to see Waitress, a great movie that happens to feature lots of baking of pies. I was in the grip of pie fever when we left the theater, so we detoured into the mall next to the movie theater to buy a new deep-dish pie plate at Williams-Sonoma. Well, as often happens in this kind of thing, I ended up not baking any pie and the pie plate has been sitting, lonely and unloved, in the cabinet for months.
Then January's Daring Bakers challenge came along: Lemon Meringue Pie. Not only was this a perfect way to try out my pie plate, but lemon meringue also happens to be one of my all time favorite pies.
You may have noticed a trend in my Daring Bakers posts - Tim does the bits that require lots of concentration and I do the bits that look pretty :) It's a well-accepted fact in our house that I have almost no patience when I'm cooking. Cutting butter into flour to make pie crust? Requires more of a Tim level of patience. I focused on making the lemon filling (yum) and whipping up the meringue.

Shockingly, we actually managed to finish this challenge before the month was even half over! In fact, we finished this challenge on January 6th! I'm glad that we made this so early in the month, my school stuff has been a bit crazy since then. I'm hoping that finally getting around to baking a pie from scratch will inspire me to bake more pies, which should be easy since my sisters got me a copy of Pie for Christmas.
The recipe was a good introduction to baking a lemon meringue pie. The filling had just the right amount of tartness for me, quite tasty. Our only problem with the pie was that the crust was a bit tough. We've had problems with this in the past when making tarts. This was likely due to over-mixing or something along those lines - something we'll work on in future pies. My only other observation was that the deep dish probably wasn't the best choice for this pie - a regular pie pan probably would have worked out a little better.
